Naan

Ingredients:
2 cups unbleached all purpose flour
2 tbsp olive oil
3 tbsp yogurt
1 packet of active dry yeast
3 tbsp of warm water
2 tsp sugar
1 tsp salt
1-2 tsp kalonji seeds / nigella seeds / onion seeds
1 tbsp finely chopped fresh cilantro
2 tsp clarified butter

Steps:
  1. Start by adding warm water, 1 tsp sugar and yeast for a minute or till the yeast rises.
  2. In a large bowl add rest of the ingredients (except for kalonji and cilantro) and mix well with your hands or you can use a food processor. Add the yeast mixture and knead for about 3-4 minutes.
  3. Knead the ball of dough until smooth and cover it with damp cloth or lid. Set it aside in a warm place for 2-3 hours or till the dough rises. Once the dough has risen, its time to bake the naan. 
  4. Knead the dough slightly to form a ball again and separate the dough into 4-5 smaller balls. 
  5. Preheat conventional oven to 350 degree F. 
  6. Dip the dough balls in little bit of flour (do not use too much flour for rolling) and roll the ball in shape of a circle. Sprinkle little bit of kalonji seeds and cilantro on the rolled dough. Place the rolled dough on the pizza stone leaving 1 inch space for all of them to bake. Repeat the process with rest of the dough balls. 
  7. Place the pizza stone in preheated oven for 10-12 minutes or until the naan's turn golden brown from the top. 
  8. Once baked remove the naan's from the oven and brush it with clarified butter.
  9. Serve hot with Dal Makhani or other entree's with dipping sauce....
